Not your Grandma's Spaghetti

I absolutely love pasta, but admit to feeling a little gross after packing in so many carbs without balancing it out with the "healthy stuff." So I created this super easy recipe that you can make on a busy weeknight and get the protein, veggies, and healthy fats that you need to fill you up and keep you going! I'm all about the shortcuts to save time, stress, and cleanup. The best part - you can use whatever you have in the fridge. I chose kale, bell pepper, carrots, and mushrooms but it's all up to you :) The whole meal should take the same amount of time it takes to boil and cook one package of pasta!

I first learned about inulin when I was working in the Meals division at General Mills in 2006 -- because I learned I couldn’t digest it! Our head of R&D also had an inulin intolerance so she would let me know which new products we could and couldn't eat -- it was our own sad little club.  Since then, the demand for “low net carb” and “weight-watching friendly” foods has drastically increased and the number of manufactured food products that contain inulin has exploded.
