Not your Grandma's Spaghetti


Appleton's market power veggie bites pasta spaghetti Italian recipe

I absolutely love pasta, but admit to feeling a little gross after packing in so many carbs without balancing it out with the "healthy stuff." So I created this super easy recipe that you can make on a busy weeknight and get the protein, veggies, and healthy fats that you need to fill you up and keep you going! I'm all about the shortcuts to save time, stress, and cleanup. The best part - you can use whatever you have in the fridge. I chose kale, bell pepper, carrots, and mushrooms but it's all up to you :) The whole meal should take the same amount of time it takes to boil and cook one package of pasta! 

 

What You'll Need:

  • 4 Appleton's Market Sun Dried Tomato Power Veggie Bites (or however many you'd like to add)
  • 1 box pasta of your choice (I used De Cecco small shells because they are adorable, but Banza has great GF options too!)
  • 1 jar pasta sauce of your choice - ideally one with high EVOO for healthy fats
  • 1 can diced tomatoes 
  • 1 bell pepper, chopped
  • 1 bunch kale, torn into small pieces
  • 1 package mushrooms, sliced 
  • 1/2 sweet or yellow onion, diced 
  • 2 carrots, sliced 
  • 1/2 tsp sea salt
  • 1-2 Tb EVOO
  • 1/2 tsp red pepper flakes 

Directions

  1. In large pot, put water on to boil and make pasta as directed on side of the box (usually cook for 8-11 minutes once boiling)
  2. In a second large pot, heat up your olive oil and toss in onions on medium heat
  3. Add carrots, peppers, and kale - saute for around 3-5 minutes
  4. Add in diced tomatoes, mushrooms, sauce, sea salt, and red pepper flakes
  5. Cover and cook on medium-low heat for around 5 minutes, or until all veggies are at desired tenderness 
  6. Place Power Veggie Bites in the microwave, cook for two minutes 
  7. Scoop out pasta, place desire amount of sauce on top 
  8. Crumble Power Veggie Bite on top of each serving
