Healthy Eggs Benedict

Healthy Eggs Benedict Recipe Appleton's Market power veggie bites sun dried tomato basil

What You'll Need:
- 2 egg yolks 
- 1 tablespoon of dijon mustard 
- Salt and pepper 
- 1/3 cup of butter
- Power Veggie Bite of your choice (we used Sun-Dried Tomato Basil)
- Arugula 
- Asparagus
- Cherry tomatoes 
- 1 piece of bread
- 1/2 avocado

1.  Preheat oven to 350 degrees
2.  Take out a baking sheet and line with aluminum foil or parchment pepper 
3.  Lay cherry tomatoes and asparagus on the baking sheet
4. Drizzle 1 tablespoon of olive oil over each, then sprinkle with salt and pepper 
5. Roast for 10-15 minutes 
6. To make your hollandaise sauce, first add your butter to a glass measuring cup 
7. Put in the microwave for 20 seconds 
8. Break your eggs and drain the egg whites, leaving only the yolks 
9. Add the yolks to the butter 
10. Add your dijon mustard 
11. Taste then add a dash of salt and pepper 
12. Put a handful of arugula on your plate 
13. Once your asparagus and cherry tomatoes are done, let them cool for 5 minutes
14. While they're cooling, toast your bread  
15. Once toasted, cut into a circle a little bigger than your Power Veggie Bite
16. Use a knife to spread avocado on your toast then season with salt and pepper
 17. Heat up your Power Veggie Bite of choice in the microwave for 60-90 seconds 
18. Add your asparagus and cherry tomatoes on top of the arugula 
19. Then add your avocado toast and put your Power Veggie Bite on top 
20. Pour your hollandaise sauce over everything and dig in!
