
I absolutely love sandwiches, but I never know how to make "restaurant quality" ones at home (and certainly don't have the patience or time!) These sandwiches save you time and headache with some great shortcuts, like using our Sun Dried Tomato Power Veggie Bites and jarred pesto sauce to make a delicious meal in just a few minutes.
What You'll Need:
- 2 Appleton's Market Sun Dried Tomato Basil Power Veggie Bites
- 4 slices sourdough bread (or bread of your choice), toasted
- 1 ball fresh mozzarella (6-8 oz), sliced
- 1 large ripe tomato, sliced
- 1-2 oz arugula (to taste)
- 2 Tb pesto sauce
Directions:
- Place Appleton's Market Power Veggie Bites in microwave and cook for 1 minute
- Spread pesto sauce on toasted sourdough bread
- Place half of the tomato, mozzarella, and arugula on each sandwich
- Slice/crumble warmed Power Veggie Bite and place one on each sandwich
- Enjoy!
